Peanut Butter
Ingredients
- 5 cups raw peanuts (hulled)
- Salt, to taste
- Honey or maple syrup, to taste (optional)

- Baking sheet
- High-powered blender (Vitamix or similar) with tamper
- Airtight jar for storage

Roast the peanuts: Spread raw peanuts on a baking sheet and roast at 350°F for about 25 minutes. Keep checking - roast until golden brown. Lighter roast = less flavor but smoother texture. Darker roast = more flavor but less smooth. Let cool completely before blending.

Blend with salt: Add cooled peanuts and salt to a high-powered blender. Blend on high speed, using the tamper to push peanuts down toward the blades. Continue until smooth.

Add sweetener (optional): If desired, add honey or maple syrup and blend until you reach the desired consistency. With a Vitamix, the total blending time is usually 2-3 minutes.

Store: Transfer to an airtight jar and store in the refrigerator.
Notes
- Blender power matters: A standard blender may not achieve the same smooth consistency. The tamper is essential for pushing peanuts into the blades.
- Roast level: Experiment with roast time to find your preferred balance of flavor vs. smoothness.
