Banana Oat Pancakes
Simple blender pancakes made with oats and banana. No flour, no dairy.
Ingredients
- 2 or 3 bananas
- 2 1/2 cups almond or cashew milk
- 2 1/2 cups old-fashioned oats
- 1 1/2 tbsp baking powder
- 2 tsp vanilla extract (or 1 vanilla bean)
- 2 tbsp hemp seeds (optional)
- Cinnamon, to taste
Homemade Cashew Milk
- 3/4 cup raw cashews (soaked 2 hours)
- 2 cups water
Drain soaked cashews and blend with water until smooth.
Instructions

Add all ingredients to a blender.

Blend until smooth and well combined.

Heat a non-stick pan or griddle over medium heat.

Pour batter to form pancakes. Cook until bubbles form on surface.

Flip and cook until golden brown on both sides.

Repeat with remaining batter.
Notes
- Batter should be pourable but thick. Add more oats if too thin, more milk if too thick.
- Top with fresh fruit, maple syrup, or nut butter.
- Use cold water and cold bananas. The blender can make the batter warm and thick. Using cold ingredients prevents this while allowing you to blend it well.
- When little batter remains, add some milk and blend to make it thinner. Use this to make a crepe-style pancake. After flipping, spread peanut butter on top and fold it up.
