# Peanut Butter Chocolate Bites

No-bake [peanut butter](/peanut-butter) base topped with dark chocolate and pistachios.

## Ingredients

- 1 cup [peanut butter](/peanut-butter)
- ½ cup almond flour
- 3 tbsp maple syrup
- 2 vanilla beans (split and seeds scraped)
- ⅓ cup dark chocolate (melted)
- *Optional:* Toasted pistachios, crushed (divided for the base and the topping)

## Instructions

1. **Prep the Ingredients:** Soften the [peanut butter](/peanut-butter) slightly (you can do this in the microwave for a few seconds or over a warm stove). Using a sharp knife, split the vanilla beans down the middle and scrape out the seeds/paste. Mix the vanilla bean seeds thoroughly into the softened [peanut butter](/peanut-butter).

2. **Mix the Base:** In a mixing bowl, combine the almond flour, maple syrup, vanilla-infused [peanut butter](/peanut-butter), and a handful of the crushed toasted pistachios (if using). Stir well until it forms a thick, cohesive dough or paste.

3. **Press the Base:** Transfer the [peanut butter](/peanut-butter) mixture into your prepared mold or container. Use a spatula or your hands to press it down into an even, flat layer.

4. **Melt the Chocolate:** Melt the dark chocolate using a hot water bath until perfectly smooth and glossy.

5. **Add the Topping:** Pour the melted dark chocolate evenly over the [peanut butter](/peanut-butter) base. Sprinkle the remaining crushed pistachios over the wet chocolate, gently pressing them down just a bit so they stick to the chocolate layer.

6. **Chill:** Place the container in the fridge and let it chill until the base is firm and the chocolate is completely cold and set (about 1 to 2 hours). Slice into squares or bites and serve!

## Notes

You can add protein powder to the base for extra nutrition. Be careful with the flavor. If your protein powder has a strong taste (like vanilla or chocolate), you may need to adjust the other ingredients to balance it out. Start with a small amount and taste as you go.
